Recipe of the week:
My new favorite anti-inflammatory breakfast
(it is mad fast to make too)
Curried Kale omelet:
2-3 stalks of kale (de stemmed) and finely chopped
1 tablespoon coconut oil
Start cooking the kale in a pan with the coconut oil. As the kale starts to gain a richer color(soften) add two eggs, stirring them into the kale as they kook. Add as much curry as you like for a balanced spicy satiating coconut aroma. Enjoy!
